The Story
The Sirks of La Subida
When Josko Sirk turned sixteen his father died suddenly leaving him an osteria. The family originates from Slowenia but is home in Cormons at the Friulian border for more than one century.
Josko ran the estate until 1974 and then decided to move his attention from farming to the today Michelin-star rated restaurant and the worldwide known hotel, La Subida. Loredana, his wife was with him from the very beginning.
The Philosophy
La Subida is a countryside resort immersed in the green, among the Collio Goriziano vineyards and woods. It was set up as a dream, from an idea that Josko and Loredana had in the ‘80s when very young.
First, they qualified and increased the worth of a simple country-style “osteria”, making it become an outstanding example, a benchmark of culinary evolution in these lands; then, by proposing lodgings, here in the Collio, in the very moment that the zone was coming into the international limelight, as its wines were making a name for themselves.
