It all started with the renovation of the Eco Park Hotel Azalea according to ecological principles to respect the environment and contribute to sustainable development. The focus was set on food and the responsible procurement compatible with the needs of an ecological hotel and its guests.

The restaurant in the eco Hotel in Cavalese: Joy for the palate
The restaurant is inspired by a creative cuisine with Mediterranean flavors and a reinterpretation of traditional Trentino recipes. On some evenings “traditional recipes”, like polenta are introduced. Of course, the restaurant also takes care of those who have special dietary needs with gluten-free and lactose-free dishes.
