The consciousness for a healthy diet and its effects on our well-being, as well as our energy has increased in the last year, fortunately! Being a vegetarian is not special anymore and many restaurants have already adjusted to vegans and different intolerances such as gluten and lactose-free.
This change is also noticeable in the offerings in the supermarkets: where earlier, you only had the choice between low-fat and regular milk, you now have plenty options of almond, oat, coconut, soy and rice drinks.
So called superfoods in form of exotic berries and grains have made it from niche products in organic supermarkets to everyone’s kitchen. All these developments are great, first steps into the correct direction – but (unfortunately!) the re-thinking of the wide mass has not happened just yet.
Therefore, I want to take the “Day of healthy diet” on March 7th as an occasion to share my 7 favorite cookbooks with you. They are suitable for all different types and different life stages and ensure a playful encounter with the topic green kitchen.

Recipe: Banana Bread
Banana bread is, differently as the name suggests, not a bread, but a cake. Or maybe a little bit of both? My healthy version of the classic banana bread is always a good idea – for breakfast, as a snack for in-between or as a cake substitute with tea and coffee. This simple basic recipe is great to get creative and to tailor this deliciousness according to your liking and occasion.
Ingredients (for a classic loaf pan):
• four very ripe, medium-sized bananas
• 150g rye flour
• 150g spelt flour
• 100 g applesauce
• 1 tsp baking powder
• 2 eggs (for the vegan version: use double the amount of applesauce)
• 20g chopped almonds & 30g chopped walnuts
• 2 tbsp maple syrup
• 1 tbsp almond milk
• 1 tbsp coconut oil (also to use to grease the pan)
• 1 dash of salt
For those who want to add an extra something, you can add vanilla, cinnamon, dried berries, nuts or chocolate chips as you wish.
Let’s start:
Mash the bananas well and mix with all the wet ingredients. Mix all dry ingredients in a second bowl together. Afterwards, lift the wet ingredients under the dry ingredients – but do not mix too long, because the banana bread will be fluffier, when the dough is not stirred until smooth. In a greased pan, bake at 180°C for about 35-45 minutes (a skewer test helps!) and enjoy without a bad conscious!
