Vegan inspiration: Green Curry made by Valsana Hotel & Apartments
For some time we have been taking you on a vegan journey around the globe on our blog, presenting special recipes from our partner hotels. Previous stops: Italy, Thailand, Germany and the Maldives. Today we continue to Switzerland to a remarkable and green hotel at 1,800 meters, surrounded by the Swiss Alps: the Valsana Hotel & Apartments in Arosa. Having opened last year, the hotel and especially the remarkable cuisine of the restaurant “Twist,” have become well established.
The “Twist” predominantly uses regional and seasonal ingredients and processes them ingenious to special dishes. The restaurant is a highlight offering food for every palate: whether you are looking for meat, vegetarian or vegan dishes. Let yourself be pampered by the variety of delicious and healthy meals, such as zoodles, the tofu pasta bowl or the Green Curry. Green Curry
1 tbsp chopped ginger
1 minced garlic clove
5 lime leaves, cut
1 tsp green curry paste
1 tbsp sesame oil
2 lemongrass stalks
600 ml coconut milk
2 green chilis
300g celery
1 tbsp basil oil
a handful of baby spinach
1 lime, grated zest and juice
fresh basil for decoration
Sauté the ginger, garlic, lime leaves and curry paste with the sesame oil, then deglaze with coconut milk. Remove the outer leaves off the lemongrass and cut the remaining stalks to small pieces, add, and lightly simmer.
Next, cut the chilis (without seeds, unless you like it very hot) into small rings and add to the sauce, together with the cut celery. Keep simmering everything.
Refine the curry with some basil oil, baby spinach, lime zest and juice, fresh basil and celery leaves, simmer briefly and then serve with rice.
Tip: You can add any green vegetable you like 🙂
