Most locations are not booked up for years like they are in summer. What's more, they are usually more affordable, so you can have a low-budget wedding without sacrificing the location. Wedding planners have more time than in summer when they sometimes have to cater for two or three weddings in one weekend. The same goes for florists, bakers, caterers, and so on. Planning can also be considerably faster this way. Spontaneous wedding in winter? No problem! 

Winter Wedding Tips

There are exceptions here, of course, locations in popular winter sports resorts - these are very much in demand, especially during the colder months of the year, and should be booked well in advance. The Christmas season also tends to be somewhat unfavourable for a wedding. Christmas parties, children's performances and the like quickly collide with the big day. 

Another thing wedding couples should consider in winter is the weather. Naturally, one wishes for a dream in white and a winter wonderland, but in many places, this no longer exists. Here, it's a case of getting creative, having rubber boots and umbrellas ready for the guests, and communicating the schedule in advance. This allows everyone to be prepared for a day that could be cold and wet and possibly bring a change of clothes. 

As with other sustainable weddings, it is of course important to ensure that the decorations for a winter wedding are sustainable and environmentally friendly. Hotel Das Rübezahl in Allgäu: With a view of Neuschwanstein Castle

"Weddings are completely personalized and are not part of a standard package," says the team of the Hotel Das Rübezahl. Elopements, weddings for just the two of you, are particularly popular in both summer and winter. These can take place in the hotel or in the middle of nature with a view of the castle. A platform at an altitude of 1320 meters is available for this purpose, providing a dreamlike backdrop for the wedding ceremony. 

For larger celebrations, the rustic Rohrkopfhütte is available. Up to 60 people can party, dine and celebrate the bride and groom. You can also celebrate in the hotel. But then only in a small group, in keeping with the elopement theme ;)

Nevertheless, there is a "Say Yes" package. In the pavilion with a view of the castle, couples can say "I do" (again) under an arch full of flowers or use the location for a very special marriage proposal. 

HUBERTUS Mountain Refugio Allgäu: Wedding under a 2,000-year-old tree

Even though you can get married at the HUBERTUS all year round, a wedding in wintry Balderschwang has its very own charm. Even in this day and age, the small town is relatively blessed with snow, so there's almost nothing to get in the way of a glittering fairy-tale atmosphere.

From the balcony of the 'WeitBlick' couples can really enjoy the snowy landscape. The bride and groom and their guests can see as far as the Swiss Alps. The spacious room is furnished with plenty of wood and radiates the rustic warmth that is perfect for a winter wedding in a small group. 

A unique location for the wedding ceremony is the 2,000-year-old Old Yew Tree in Balderschwang. A very special atmosphere arises during the wedding ceremony in the presence of one of the oldest trees in Germany.

Green Pearls® hoteliers are also facing a new challenge. The rooms should be warm and in the spa area guests should be able to forget their own worries for a moment. At the same time, in the face of the climate crisis and rising energy costs, rethinking and action are urgently needed.

Sustainable energy concepts and creative solutions

The hotel sector contributes about 4% to the current consumption of energy resources. Savings are an inevitable step here as well. For our Green Pearls® partners, sustainable business in harmony with nature is in their DNA. In view of the current situation, they are implementing more sustainable energy concepts and creative solutions as a matter of course.

Even though the hotel sector represents only a small share of energy resources consumption compared to the manufacturing industry, it has a high potential for savings, especially in the spa area. Here, saunas, swimming pools and steam baths are constantly heated. The room temperature is higher and the lights burn longer than in the rooms. The Green Pearls® partners are aware of the high energy consumption, so they have emphasised energy-efficient concepts within their sustainability strategies from the very beginning. For the coming winter, almost all of them are planning to further adapt to the gas shortage and the current situation.

Book Spa areas exclusively and save energy

Under the motto "Weihrerhof goes green", a sauna at the Hotel Weihrerhof on the Ritten already remained unused during the summer. The Pichler family had decided to do this due to the high summer temperatures. And in winter the sauna times are shortened and they only run when they are actually being used.

The Hotel Bella Vista Zermatt has taken a similar approach. In summer, it opened the spa area only on request, thus reducing electricity consumption. For the upcoming winter, they are planning to reduce the spa hours or to start up only one of the two saunas. With a wealth of experience in the short-term, flexible implementation of new measures from the Corona crisis, the Bella Vista is optimistic about the upcoming winter season.

The Shepherd's Cart sauna at Hotel Okelmann's in Warpe, Lower Saxony, is also only heated when guests book it in advance. This efficiently conserves resources. The hotel's hot tub must also be booked individually in advance. Only then is it heated. Not with gas, however, but with dead wood from the hotel's own forest area.

Instead of a shepherd's cart, guests at the lifestyle hotel SAND on the Baltic Sea coast can expect a rooftop sauna with a view over the surrounding countryside. This sauna is only heated by prior arrangement and can then be used exclusively, and not only since the impending energy crisis. In addition to the exclusive operation of the sauna, the SAND also ensured optimal insulation during the construction of the building in 2017 by installing Cero sliding doors, among other things. There are also plans to heat and cool the Sunny Side building with geothermal energy and to build a photovoltaic system.

Customised Building Technology

At Hotel Das Rübezahl in Bavaria, nothing stands in the way of hotel operations, even in the event of a gas shortage. The pool and outdoor pool are already heated exclusively with waste heat from the hotel's own cold storage facilities. The regulation of the sauna, among other things, is adjusted manually by timers. In the future, an automatic system will adjust such energy-intensive facilities to the individual outdoor temperature and usage at specific times.

One such automatic system is Spa Control, which has been in use at Gut Nisdorf for several years. With the help of motion detectors, Spa Control only switches on the lights and sauna when someone is in the corresponding area. It was important to the team of the estate that the guests can use the wellness area in the afternoon without restrictions and without prior appointment. Nevertheless, energy should not be consumed unnecessarily.

Innovative and sustainable concepts

With modern and energy-saving technology, the Rehlegg also sets an example in the field of energy efficiency. The outdoor pool receives its heat via a solar thermal system, and already 50% of the electricity demand can be covered from the hotel's own production. In order to be prepared for the future, the Rehlegg is planning a photovoltaic system.

Electricity from the hotel's own solar system, two of its own combined heat and power plants for energy and heat - at the HUBERTUS Mountain Refugio, the energy concept is designed for sustainability from front to back. Of course, this also includes the newly built Mountain Spring Spa.

Underneath the plunge pool in the sauna area and the natural bathing lake runs a collector field with cooling liquid. The coolness recovered there makes it possible to lower the floors of the saunas from up to 60 °C to comfortable temperatures. In winter, this system ensures that the plunge pool does not have to be heated up separately and does not freeze over.

Thanks to the modern shading system in the HUBERTUS, blinds darken the hotel rooms and the spa area under certain conditions. In summer, this means that the spa needs to be cooled almost 30 % less.
 

Water from sustainable sources

The view of the HUBERTUS is characterised by the water that surrounds it in the form of an infinity pool, the diving pool and the natural bathing lake. The water used for this comes from the hotel's own mountain spring. This is also where the hotel gets the water for the gardens and the toilets in the spa area. The waste water is transferred via the regional sewage treatment plant in the valley to relieve the Balderschwang spring.

Guests can rest assured that everything is being done to reduce energy consumption and, at the same time, provide them with a relaxing stay. From the and Chalet Directly onto the Cycle Path

The Austrian town of Sölden is a true biker's paradise. There are no less than 43 routes on offer that will inspire both beginners and ambitious mountain bikers. The tracks, routes, and tours with different levels of difficulty are all part of the Bike Republic Sölden, a bike project founded in 2015, which in addition to the ecologically constructed trails also cares for a lively biker culture in the Ötztal.

From the Leni Mountain Apartments & Chalet you can directly access the trail network. Gentle trails, rapid descents, and challenging climbs ensure that a biking holiday is never boring. A highlight is the ascent to the Rettenbachferner. 2800 metres high, the mountain is the highest paved destination in the world.

Starting this summer, a beginner's and practice line begins at the front doors of the Leni Mountain Apartments and the popular Leiterberg Trail passes right by the chalet. By the way, Leni Mountain is well prepared for bikers of all kinds. As a certified bike accommodation, it offers lockable storage facilities, a washing area, tools, repair kit and everything else your heart desires.

On the Trail of the Romans in South Tyrol

The Adige cycle path follows the course of the river all the way to Verona and also passes the Hotel La Vimea in Naturno. But you don't have to cycle the entire trail, the section to Merano is only a few kilometres long, so the tour is also worthwhile for cyclists who are simply looking for a relaxed lap.

The route follows the Via Claudia Augusta, the old Roman connecting road between north and south. Emperor Claudius extended it from the routes laid out by Emperor Augustus in 15 BC. Today it is being rediscovered as a cultural axis that can be explored on a cycle tour along the sights and orchards. The Via Claudia Augusta is also popular as a long-distance hiking trail from the Danube to the Pos plain.

The holistic vegan Hotel La Vimea can serve either as a starting point or as a place to relax after crossing the Alps. Yoga, wellness and creative vegan cuisine provide well-deserved relaxation after the bike tour.

Go with the Flow Along the Weser Cycle Route

In Lower Saxony, you can also cycle alongside a river. The Weser Cycle Route is the most popular long-distance cycle route in Germany (ADFC Cycle Tour Analysis 2022) and invites you to summer cycling tours on both sides of the Weser for almost 520 kilometres. If you don't want to cycle the entire route from Hann, Münden to Cuxhaven, will also be reward you with great river views, idyllic floodplain landscapes and historical sights.

Okelmann's in Warpe is only a few kilometres from the Weser Cycle Path and therefore a wonderful retreat for a few days' break. In the midst of the fields, you can relax your tired limbs in the shepherd's cart sauna or the wooden whirlpool. Yoga classes provide a welcome balance to cycling.

Always a bit of Baltic Sea

Another long-distance cycle route that literally passes by the front door of a Green Pearls® partner is the Baltic Sea Cycle Route, which stretches from Denmark to Poland and beyond. Starting from Timmendorfer Strand, you can explore the surrounding Baltic coast along this route. It follows along the steep coast, windbreaks and coastal forests characterise the landscape and the salty air reminds you that the Baltic Sea is always only a short distance away.

In addition to the route along the coast, there are also cycling tours inland, for example with the Priwall ferry across to Mecklenburg-Western Pomerania, to Eutin Castle or along the Trave to the Hanseatic city of Lübeck. The Lifestylehotel SAND is an ideal starting point for this. Firstly, the wellness offer is just perfect after the tour through the amazingly hilly landscape. And secondly, the hotel cooperates with the bicycle manufacturer myBoo. Guests of the SAND can rent bamboo bikes on site and explore the area in style and in an eco-friendly way. In addition, the purchase of each bicycle directly finances a school in Ghana. Sustainability across all levels!

Some distance east, around 18 kilometers away from the Hanseatic city of Stralsund, lies Gut Nisdorf, yet another green pearl on the Baltic Sea Cycle Route. Guests of the sustainable manor located directly at the Bodden coast can take a ride on the tour section from Fishland-Darß-Zingst to Stralsund and Rügen and actively explore the richly varied coastal region.

Pure Nature in the Spreewald Biosphere Reserve

When people talk about the Spreewald, they often think first and foremost of canoeing, paddle boats and boat trips. But the region can be explored just as well from another perspective: from the saddle of a bicycle.

Directly opposite the Strandhaus Boutique Resort & Spa Spreewald, you can rent bicycles or e-bikes and get going. From Lübben, you can join the well-developed network of cycle paths. One of the best-known routes is the Gurkenradweg (Cucumber Cycle Path), which is identified by a cycling cucumber on the signs! Low gradients, well maintained cycle paths, and only a few sections on busy roads make the path ideal for families and cyclists looking for a relaxed tour. In total, the Gurkenradweg winds its way through the biosphere reserve for about 260 kilometres. However, it can also be wonderfully explored on the sections around Lübben. There are always shortcuts or detours that lead back to the hotel.

There you will be greeted by lovingly tended gardens, a panorama sauna and authentic Spreewald cuisine.

By Bike through the Black Forest

The SCHWARZWALD PANORAMA has been awarded the Bett+Bike label by the ADFC and has proven to be an ideal base for cyclists to explore the Black Forest on two or three wheels. Guests can park their bikes at night in lockable shelters, there are repair kits or, if necessary, information on where to find the nearest bike repair shop. And drying facilities are available for wet clothes or equipment.

After a hearty breakfast with regional and seasonal products, you can now even rent e-bikes directly at the hotel. Our Green Pearls® tour tip: the loop through the Albtal nature reserve, through the Holzbach valley and the Maisenbach valley. Along the three valleys and streams you can explore the landscape and nature of the northern Black Forest. You should plan for just under half a day, after all it's all about being on the move slowly, enjoying and relaxing. After a leisurely lunch, you can either add a second tour or return to the hotel and spend the rest of the day in the spa area with its large sun terrace, reenergising with a yoga session, or enjoying a massage.

Explore the Rhön with a tour guide 

Those who don't like to explore the unknown trails on their own and would rather take a hike with a professional guide can join Daniel Albrecht on a tour from the Biohotel Sturm in the Rhön Mountains. He knows all the trails in the region inside out and leads his guests on tours through the varied landscapes of the Rhön region that suit their level of difficulty. Guided MTB Tours are available as single tours as well as in a group.

Fabienne Anthamatten – Large and small building blocks for a sustainable future

Since 2010, Fabienne Anthamatten has been the manager of Hotel Bella Vista Zermatt and is the third generation to run the hotel. Today, the hotel has 21 rooms and a wellness area - a modest family-run business with a breathtaking view of the Matterhorn. Fabienne has been committed to sustainable action in everyday hotel life from the very beginning. The cornerstone for this had already been laid by her parents. Separating waste or, better still, avoiding it altogether and only taking as much food as she could actually eat, these are the memories that shaped her childhood. Fabienne and her two sisters helped to collect fruit to make jam - everything was recycled, be it from an animal or a plant. For Fabienne, what lasts has value. Added to this is her love of nature and the region. 

This is also evident in the hotel business: At Hotel Bella Vista, electricity is generated from hydroelectric power, regional products are used, at breakfast, the eggs come from the hotel's own chickens and unnecessary packaging and plastic bottles are now completely avoided. With her place on the board of the Zermatt Hoteliers' Association, Fabienne is also committed to sustainable action, sometimes even against long-established traditions. With her many ideas, both big and small, she is laying the foundation for a sustainable future. In the region, in her business and in her family. In her private life, the nature-loving hotel manager spends a lot of time in the mountains. This includes an annual trip to the Gorner Glacier to measure how far it has receded. These moments, when climate change is so clearly visible, encourage her to act responsibly with resources and to prioritise what is essential.

Elena Scalambrin - With enthusiasm for family history

Elena Scalambrin, head of the Relais del Maro in Italy, together with her mother, has turned their family estate into a real gem. For many generations, Elena and her family have lived in the small Ligurian village of Borgomaro, in the hinterland of Imperia. The family worked as cobblers, innkeepers or butchers and were always a part of the village community. Elena and "La Mamma" have experienced many beautiful moments of their lives within the walls of these residences and can tell secrets and anecdotes about every room and corner. When the family-owned properties were in urgent need of renovation, Elena decided to transform them into a hotel spread over several buildings - an Albergo Diffuso. In 2012, the Relais del Maro came to life and has been delighting guests with its exciting blend of tradition and modernity ever since. 

The guests' well-being is the top priority here. "We always have the best possible result and environmental friendliness in mind," says Elena. And this is very clear throughout all of the many small details. The Relais del Maro strives to select organic products from Liguria and lower Piedmont. The water for irrigation and the pool comes from an artesian well and even the cleaning products used are 95 % environmentally friendly and biodegradable. However, the wonderful food from "La Mamma", the many stories from the village and the warmth of the hostesses are what the guests of the Relais del Maro remember the most.

Marion Muller - Entrepreneur and visionary 

During her tourism studies, Marion Müller already recognised the importance of sustainability for the travel industry. She was involved in various projects for further development and decided to work within low-impact, sustainable tourism herself. With the acquisition of a property requiring refurbishment and modernization at Timmendorfer Strand, Marion Muller and her husband Lambertus were able to realize their own vision of a green hotel with a focus on modern lifestyle, sustainability and naturalness. Thus, the Lifestylehotel SAND was born. Bit by bit, the green vision became reality. The SAND is now using Geothermal Energy and is planning to install a photovoltaic system in the future. Thirty-four new rooms and a completely new interior design with mostly natural materials make the SAND an ecological but unique retreat with a certain "lifestyle". Back then, as today, socially responsible corporate structures played just as important a role in the selection of partners as environmentally friendly production. 

A sense of composure and awareness of being entrepreneurs rather than underachievers always helped Marion Muller when things did not go so smoothly, and this certainly includes the pandemic. As an independent entrepreneur and "doer", she endeavoured to see the crisis as an opportunity and has reconsidered and revamped the hotel's processes. This has led to new ideas, such as integrating suggestions from employees via team workshops, and encourage the kitchen team to become more aware, to do even more themselves, as well as to be proactive about food and waste reduction. In addition, the program also includes an own herb garden. For some time now, another inspiring woman has been at Marion Muller's side. Yvonne Bork has been taking care of the operational business as director for about a year now, allowing the hotel manager more time for public relations, pushing the green hotel concept and for private freedom. In her private life, Marion Muller is also committed to people, the environment and animals, for example through the Whale and Dolphin Conservation (WDC) organisation, which campaigns for endangered porpoises. Whether it's new concepts for the hotel or private matters - Marion Muller certainly never runs out of ideas.

Tanja Duračković - Pioneer with a passion for nature

Tanja Duračković is the managing director and the founder of Adriatic Pearls, a company which owns the Eco-Apartments Hotel The Dreamers' Club and the Natural Design Apartments Sunshine with pool in Lumbarda on the island of Korcula. Tanja loves nature. Fresh air, the sea, ecologically produced food from the region, the stylish design of the wooden and stone houses and a laid-back way of life—to her, that's luxury.Over a decade ago, the Croatian vacation home market was swamped with unappealing rental homes being marketed by somewhat untrustworthy operators. Tanja identified a niche in the market of authentic and charming vacation homes offering quality services—and that was the birth of Adriatic Pearls. A business offering personalized, beautifully designed (and later on eco-friendly) summer residences right on the beach. 

Soon after, she bought her first apartment house, the Natural Design Apartments. A fewer year later, she became allergic to everything that was plastic. Another motivator to build an all green, all natural, toxic free home. It was something that she could integrate even more out of her love for the Adriatic coast. A place not only environmentally friendly, but a space to unwind and recharge at the same time. She purchased an old derelict house located above the marina in Lumbarda, fully renovated it and reopened it as an Eco-Apartment Hotel called The Dreamers' Club. A thoroughly sustainable retreat emerged. Somewhere one can dream, relax or simply make memories. With her commitment, Tanja Duračković aims to encourage others by following her initiative and further developing the market for green, healthy and ecological vacation homes.

The Okelmann's Sister Duo

There are two women at the helm of Hotel Okelmann's. Maren and Kristin Okelmann run the traditional hotel, which is now in its fifth generation of family management. Both sisters are experts in their field and learned their trade in other hotels before they returned home to their parents' beloved business. For generations, people and the earth have been at the centre of everything the Okelmann family does. "Our passion is to bring people and nature together. Not only in the house and kitchen." This statement also nicely sums up their philosophy. Maren is a trained sound massage therapist and yoga teacher and passes on her knowledge to guests in the form of regular courses and retreats. A brand-new yoga room is now also part of the Okelmann's offering. 

The sisters have taken a lot of time for new ideas and visions to make Okelmann's a real feel-good retreat and place full of warmth and welcoming. A completely sustainable concept included! For example, Okelmann's sources its food almost exclusively from regional suppliers and farmers, preferably in organic quality. Baking and cooking is done according to traditional family recipes and with a lot of love for the craft. A sustainable energy supply, fairly produced towels and bed linen as well as high-quality natural cosmetics in the rooms are also part of the sustainability initiatives. But Maren and Kristin don't want to rest on the status quo. There will certainly be more innovative things to report from Okelmann's soon.  

Mother & Daughter - A successful leadership team 

"We care about our city, our environment, our future and social life which is why we try to live sustainably. We encourage everyone to be more aware of the environment, recycle waste, minimise plastic consumption, save water and never forget to smile!" shares Dalia Remeikaité regarding their approach to sustainability. Dalia and her daughter Dovilé Šipelienė opened the 4-star ROMANTIC Boutique Hotel & Spa in 2002. The two want to show that nature-oriented and eco-friendly ideas and the corresponding sustainable lifestyle are realistic and feasible for everyone. 

They faced many challenges before the launch: The ROMANTIC Boutique Hotel & Spa is located in a renovated former mill in the centre of the Lithuanian town of Panevėžys. The building is on the list of historical and cultural monuments of the Republic of Lithuania, which meant many restrictions and conditions during the renovation. The two put all of their heart and soul into the transformation and the result is an authentic design that embodies the essence of the industrial past combined with the elegance of the present. Dalia and Dovilé have also incorporated their connection with the region and history in the beautiful ETNO SPA, where traditional Baltic healing methods are used. The harmonious and cosy décor in the hotel beautifully reflects the personal touches of the management duo.

Wartegg Castle: following in the footsteps of royalty on Lake Constance

The perfect combination of tradition, culture and modern architectural design awaits you at Wartegg Castle, the first Swiss Historic Hotel in Eastern Switzerland. The three seminar rooms of up to 60 m² as well as the large 110 m² concert hall are well suited for larger meetings, conferences, workshops, training or retreats. The impressive castle and spacious grounds provide an inspiring atmosphere. The seminar rooms are equipped with breathable, natural materials, warm light and low-radiation seminar technology and - like the operation of the entire hotel - are sustainable and ecologically oriented. For example, from pencils to toilet paper, all products are Ecolabelled and the electricity is 100% green, partly from the hotel's own small river power plant.

Landgut Stober: Conferences in the greenest hotel in Europe

Landgut Stober (the Stober Estate) is located about 20 kilometres west of Berlin, and is one of the industry leaders for sustainable conferences, workshops and initiatives. Up to 750 people can be accommodated in the 14 conference rooms in the lodge, the former stables, a distillery and the granary dating from 1875. Rooms with a unique charm, combined with a thoroughly sustainable hotel concept and an exclusive location on Lake Groß Behnitz. The Biohotel has its own access to the lake and a large park - the best prerequisites for relaxing and regaining energy during a break in the conference or after the programme. For its conference concept, the bio-certified and CO²-neutral Landgut Stober was named the greenest hotel in Europe only last year.

Hotel Milano Scala: Downtown Milan

Milan's first carbon-neutral hotel, the Milano Scala is located in the centre of the metropolis just a few steps from Montenapoleone, Duomo and Piazza della Scala. Housed in a historic Milanese palazzo, the hotel offers three different meeting rooms for a maximum capacity of 80 guests in the largest room. A stage can also be installed on request. Technical equipment includes a large retractable screen, a projector and an audio system with hand-held microphones. The Milano Scala has a sophisticated energy-saving system with water heat pumps for heating and air-conditioning, an automated system to regulate relative power consumption and magnetic room cards that stop the air-conditioning from running when the windows are opened. Eco-chic, classical music, organic green cooking and a terrace with herb garden overlooking the city: An experience that stimulates the senses around the conference agenda.

Green City Hotel Vauban: Green meetings in Breisgau

The Green City Hotel Vauban is a shining example of aesthetic inspiration and energy efficiency - right in the heart of the green city of Freiburg. What is special about this green city hotel is its integration concept. People with and without disabilities work together on an equal footing and with enthusiasm. Of course, the hotel also hosts a number of accessible rooms. For sustainable conferences and seminars, the hotel offers a meeting room equipped with the latest technology for up to 60 people with functional quality, responsible philosophy and green design. Complementing the normal conference equipment, the hotel has an induction loop for hearing-impaired guests. An added plus is the proximity to the city centre, the main railway station and the exhibition centre grounds.

SCHWARZWALD PANORAMA: Green conference hotel in the Black Forest

Meetings in the SCHWARZWALD PANORAMA are "green" all around: from energy-saving event technology to conference materials from fair and resource-saving origins through to their recyclable materials. The conference service, which is available across eleven event rooms with a total area of 1,300 m2, includes plastic-free lunch packages for in-between, organic coffee and tea stations and healthy energising snacks. Each conference package includes a Yoga, Active or Selfness creative break to help participants gain new insights and fresh ideas with a clear head. Using the hotel's CO2 calculator, organisers have the option of calculating the CO2 emissions caused by the arrival and departure of all participants. And then offset them by investing in a climate protection project on a pro-rata basis. A climate certificate for the carbon footprint is included.

Naturresort Schindelbruch: Sustainable, digital, intuitive

The Naturresort Schindelbruch in the southern Harz region offers five professionally equipped conference rooms for up to 100 people, optionally with their own terrace. All rooms of the ecological hotel provide daylight and can be completely darkened. The meeting point in the heart of Central Germany also scores for conference guests with versatile leisure possibilities like restaurants, a wine bar, the hotel bar androht to forget the 2,500 m2 spa area.)

Naturhotel Aufatmen and Okelmann's: Cosy conference retreats

Sometimes, a smaller venue with an exclusive and personal atmosphere is what’s best for a seminar or workshop. Look no further than the Naturhotel Aufatmen in Leutasch for the option of studying and teaching against the magnificent backdrop of the Alps. Spaces include the 70 m2 yoga room and the winter garden. During the break, a refreshing dip in the organic bathing pond and a healthy snack is the best way for participants to refill their energy stores.

Okelmann's in Warpe, Lower Saxony, also offers a friendly and inspiring conference setting. For workshops, yoga retreats or family celebrations, there is a large function room (180 m2), a yoga room (80 m2), along with an outdoor terrace, the Okelmann's restaurant and the Room of Silence (25 m2). A small, individual wellness area with a “tinySauna” and hot tub awaits guests in the hotel garden.

For events in the two family-run hotels, the same applies to the hotel business as a whole: wherever possible, the offer is sustainable and in harmony with nature.

Vegan with full conviction

La VIMEA in Vinschgau is the first holistic vegan hotel in Italy and also the only one among the Green Pearl® partners that is completely vegan and holistically oriented. This is evident not only in the choice of food, but also in the selection of materials, the architecture, and the range of energizing and Ayurvedic treatments. The adults-only retreat near the centre of Naturno offers sustainable relaxation with yoga retreats, saltwater pool, natural bathing pond and exclusively vegan and organic creative cuisine. Artfully decorated dishes include specialities such as fragrant hay soups, wild herb salads, stuffed courgette flowers and homemade nut cheese.

Vegan-vegetarian – meatless variety

The Naturhotel Aufatmen offers not only vegan, but also vegetarian cuisine from time to time. Vegetables are at the centre of all culinary events. Classically or newly interpreted in the show kitchen, but always accompanied by exciting regional and international spices. Maria and Wolfgang Pfeiffer from the Naturhotel in Leutasch not only want to restore the value of culinary “simplicity”, they also want their guests' bodies and minds to come together by reducing the unnecessary and putting nature in the foreground. This motto runs throughout the entire operation of the hotel. With its organic swimming pond, yoga programme and various relaxation areas, guests of the hotel can quite literally breathe a sigh of relief and forget the stress of everyday life.

The Paradiso Pure.Living on the Alpe di Siusi in South Tyrol is the first vegetarian hotel in the Dolomites. However, it is also a perfect holiday destination for vegans, as more than half of the dishes on the hotel's menu are vegan. In addition to a healthy lifestyle, the holistic hotel concept also features yoga, music and contemporary art – all under the Pure.Living umbrella.

Vegan included – sustainable cuisine for everyone

Not everything has to be vegan. Hotels that can cater for vegans, vegetarians, and meat eaters are particularly popular with families and couples. They themselves combine different eating preferences and also love the variety. Many Green Pearls® partners are prepared for all culinary preferences of their guests. Some of these include the Biohotel Grafenast, the Creativhotel Luise, Okelmann's and the CERVO Mountain Resort. These hotels are not only prepared for guests on a purely plant-based diet during January, but all year round. 

At the Creativhotel Luise Erlangen, for example, there is a wide variety of vegan products available such as milk and yoghurt alternatives, vegan spreads, vegan cakes, vegan pastries and, on request, some warm vegan dishes. The CERVO Mountain Resort in Zermatt has made one of its three restaurants completely vegetarian/vegan with the Bazaar.

Okelmann's in Warpe, Lower Saxony, always offers vegan breakfast, cakes and evening menus, which they will be expanding in 2022. It is very important to the kitchen team of the hotel's own Café Heimatliebe that regional products are used, that the dishes are always fresh, and above all, that they have been prepared without additives and flavour enhancers. 

The Biohotel Sturm has firmly adopted Veganuary into its hotel concept and offers a particularly large selection of vegan dishes and drinks at all meals during January. The aim is not to raise an accusatory finger and criticise other forms of nutrition in January, but rather to whet the appetite of one or two meat eaters for vegan cuisine through creative and, above all, tasty vegan dishes. And there's no better place to do this than in the show kitchen, where the chefs and guests can chat face-to-face. For the remaining eleven months of the year, there is a smaller yet diverse range of vegan dishes, such as chestnut soup, lentil fritters with coconut curry cream and even a vegan chocolate nut brownie.

Those who live and eat vegan have an ever-expanding range of holiday options to choose from – with the sustainable Green Pearls^® partners among them.

Trend topic 1: Storytelling

Those who have the opportunity to talk with the leaders and masterminds of sustainable tourism destinations immediately become inspired and enthusiastic about the bold ideas, fantastic realisations and passion that the sustainable concepts bring with them. However, this often remains hidden from many - especially potential guests. Filling this communication gap is at the top of the to-do list for the coming year. ‘Do good and spread the word’ is therefore the motto for 2022.

Ilona Jeckelmann from the CERVO Mountain Resort in Zermatt sees a different focus among the new generation of travelers: “Luxury and pleasure should go hand in hand with sustainability. The tool of storytelling is important here. We have a very large section on our website that informs guests about our measures, and we would like to expand this even further. We also want to use social media, our blog and the newsletter to better and more clearly convey our visions.”

Kristin Okelmann from Hotel Okelmann's in German Lower Saxony is also planning increased time and budget for social media, blogger relations and other distribution channels to report on the family hotel and its sustainable ideas in 2022. Only recently, the hotel created a more sophisticated concept, set up a yoga and sound massage room and invested in a wooden whirlpool. So, there’s plenty to talk about!

The Mawell Resort in Hohenlohe uses a mix of communication tools to promote the initiatives of the hotel, which is sustainable from the ground up. Internal guest mail introduces guests to the concept - from energy generation, to the use of certain foods, to the focus on nature - and raises awareness of sustainability in general. Social media, the second communication pillar, is to be further expanded in 2022 and optimised to suit the target group. This also includes a stronger presence within the regional network.

Hannes Müller from Genießerhotel Die Forelle on Lake Weissensee sums up his communication strategy in a simple formula: "We must live our operating philosophy 100% honestly. Guests have become brutally sensitive - greenwashing is recognized early on... That's why we are simply authentic in everything we communicate. Everything we communicate to the outside world must be felt by the guest on site. Personal recommendations - that’s the best marketing option for us!"

Trend topic 2: Digital guest communication

Digitalisation reduces paper consumption, especially when it comes to communication. However, digitalised communication also considers the changed behaviour of our time and enables a continuous exchange of information between providers and guests.

The Lifestylehotel SAND on the Baltic Sea increasingly relies on digital guest communication and has reduced its paper consumption to zero. Paperless check-in, paperless questionnaires and paperless guest requests have already proven to not only be more efficient, but also 100% more environmentally friendly. This has been a great success for the hotel. In 2022, the SAND is further expanding digital communication with guests before arrival and after departure by using the "Customer Alliance" rating platform. As mobile phones are increasingly the communication tool of choice, the hotel is saying goodbye to the digital info folder via SuitePads and introducing the “Gastfreund app”.

Schloss Wartegg at Lake Constance particularly values the benefits of positive customer reviews: “With top ratings on Tripadvisor & Co, we have set ourselves apart from the competition. Of course, sustainability is a USP, which we try to communicate as often as possible via social media, newsletters and press coverage. We use sustainability labels such as Swisstainable and Green Pearls® so that guests can orient themselves to defined standards,” says Richard Butz.

Trend topic 3: Innovations in sustainable technologies

Sustainable business is an ongoing process that is constantly shaped by new ways of thinking, technological progress - and of course by the budget available. The Green Pearls® partners have ambitious plans for the coming year:

CERVO Mountain Resort is fully committed to the topic of energy and already started to optimise its energy concept back in 2020 - this development is to be continued. “Thanks to boreholes and geothermal probes, we have succeeded in covering 95% of our energy needs with geothermal energy. Likewise, all wastewater heat is reused in the plant to heat water. In addition, we are working on establishing the entire grounds of the resort as permaculture.” The SAND Lifestyle Hotel will also invest in energy efficiency in 2022 and has already had an energy consultation carried out.

The SCHWARZWALD PANORAMA in Bad Herrenalb has big plans. To achieve the goal of embedding sustainability through 100% of the value chain, from 2022 all 96 rooms are to be completely renovated and redesigned according to the cradle-to-cradle principle. This means that all materials are permanently part of natural cycles or closed technological loops.

Trend Topic 4: Sustainable Wellness + Health

In addition to the unbroken interest in sustainable spa and wellness offers, the Green Pearls® partners believe that the health focus will become more and more of a priority. The Mawell Resort is therefore planning an entirely new MediSpa hotel area with treatment rooms and therapy options in the long term. Health & prevention courses as well as individual fitness & nutrition advice are also to be included. In addition, the construction of a large indoor pool for the wellness area of the resort is in the planning stage.

Due to the enormous demand for wellness and cosmetic services, more space is also to be created for the Almwiesn Spa in the Berghotel Rehlegg with a new treatment room. This will allow the number of treatments to be increased and the spa offering to be expanded by several new facets.

In 2022, the Hubertus Mountain Refugio in the Allgäu Mountains will continue to rely on its Holistic Life concept to awaken new life energy. The holistic approach is being implemented in the hotel on three levels: Holistic Touch (spa + wellness), Holistic Spirit (coaching, mindfulness) and Holistic Food (slow food). From treatments to movement, relaxation and coaching sessions to nutrition, the offers are oriented to the seasons and thus also to the human biorhythm.

Wellness and health will continue to be important for the ALDER Lodge Ritten in South Tyrol. Actually, it will play an even bigger part in 2022. Apart from the already extensive range of offers in the spa, cosmetic and sports area, the hotel will work together with a local farmer. They plan to jointly manage a directly neighboring property for fruit and vegetable cultivation and animal breeding. 

Trend topic 5: Gentle city tourism

The topic of sustainability will also shape city tourism in 2022. Rail travel is on the rise and hotels that have already adopted a sustainable approach, such as the Hôtel Le Pavillon in Paris or the zero-emission Hotel Milano Scala in Milan, are facing increased demand with their range of e-charging stations, organic cuisine, zero-waste breakfast, special air filters and electrosmog-protected rooms. Innovative concepts such as Creativhotel Luise's regrowing Hotel Room® are attractive flagships for sustainable city tourism.Sustainability is also high on the agenda of companies, so the topic of green meetings & events continues to gain importance. The Creativhotel Luise in Erlangen is therefore expanding its business offer with two new conference rooms.

Contemporary guest communication, new technologies, sustainable wellness and business travel - the topics and plans of the Green Pearls® partners for the coming year are diverse. What they all have in common is that they are future-proof and consistently sustainably oriented – bring on 2022!

Interest in sustainable accommodation has increased in 2021

The awareness around sustainability has increased significantly, especially with regard to regional tourism, which is a point that Kristin Vogel, Head of Marketing Mawell Resort Langenburg, notes. Guests are (re)discovering their home countries and the many great things they have to offer, and this is reflected both by longer stays along with a greater interest in regionality. In the restaurant sector, a strong increase in demand for vegetarian and vegan alternatives as well as regional and seasonal dishes is noticeable, adds Vanessa Baumann, Marketing & Sales Mawell Resort. The trend towards more plant-based dishes and healthier options has also been seen by Tammy Gan, Marketing Communication Manager of Gili Lankanfushi in the Maldives, “More and more guests are travelling with a stronger social and sustainable awareness. For example, they stay longer in one place and make fewer trips per year.”

Marion Müller from the Lifestylehotel SAND on the Baltic Sea does not believe that the pandemic has greatly changed the awareness of sustainability among her target group, but has definitely strengthened it. Due to the travel restrictions, however, there was also demand from guests who are not normally concerned about sustainability.

Domestic tourism on the rise

Travel restrictions and an increased need for safety have made many people prefer to holiday in their own country. Ilona Jeckelmann, Project & Marketing Manager of CERVO Mountain Resort in Zermatt, is pleased to see the increase in the awareness that one's own homeland has a lot to offer. As has the appreciation of local products and crafts. Fabienne Anthamatten, hostess of the Hotel Bella Vista Zermatt, confirms this: "Most of our guests are currently Swiss. And there we notice that there is a great appreciation for our sustainable thinking and actions in the business. However, we are explicitly appealing to sustainably-minded guests with our offer. We very much hope that 2022 will allow even more international tourists to find their way to Zermatt.

The high appreciation for sustainable accommodation from local guests has also given Schloss Wartegg on Lake Constance a healthy number of bookings. Richard Butz is sure that in the coming year, too, the hotel will be filled primarily by domestic tourists who value a safe and personalised journey, the hotel's hygiene concept, the beautiful nature and good, healthy food. The hotel is therefore currently hiring more staff. With a spacious marquee planned for aperitifs and small celebrations, Schloss Wartegg will also continue to provide an alternative to indoor celebrations in the long term.

Wellness & health were the winners of the year

The high demand for people to be able to simply switch off and take some time out for themselves has led to an enormous popularity in wellness and healthcare offers. Natural cosmetics, soothing massages, yoga and fasting offers were very well booked by all Green Pearls^® partners at the end of the year. Fabienne Anthamatten is therefore very pleased that the Hotel Bella Vista was able to expand its wellness area during 2021: “With the addition of our Arvenstube with waterbeds, the Alpine Spa Bella Vita is now complete and geared towards nature-conscious guests seeking relaxation.” The Naturresort Schindelbruch also appeals to this clientele with its brand new Landresidenz, which includes four private spa suites.

The Berghotel Rehlegg also boasts an update: the hotel has used the lockdown period to develop its own herbal cosmetics line. These are produced in-house under the strict conditions of the European Cosmetics Regulation. For the health of their guests, all mattresses in the hotel were also replaced. Every room now has Hästens mattresses, made entirely from sustainably sourced natural materials.

High demand for personalise offers

Holidays in your own holiday home or appartment: the trend of living the day according to your own rhythm and being independent of predefined hotel structures has strengthened in 2021 and will continue to do so in 2022 according to our Green Pearls® partners. No matter whether in front of an impressive mountain panorama, as with the Summit Lodges Pfunds and the holiday appartments of The Peak Sölden furnished in stylish alpine style, or the original holiday home complex MANOAH Häuser am See in Thüringen. The demand, especially for high-quality accommodation that fits authentically into its surroundings and offers a natural experience, is growing strongly. Günter Beer from the Pou de Glac holiday home near the French border and the Costa Brava notes: "We were able to realise our vision of sustainably built accommodation in the middle of nature and have already noticed after the first few months in operation that we have hit our mark. Our guests not only appreciate the secluded location and the historical ambience of the former estate, but are also very interested in our sustainable energy concept and the environmentally friendly restoration works.

Some of the Green Pearls hotel partners who offer separate accommodation units on the hotel grounds, such as the Hotel Sturm in the Rhoen Mountains with its kitchen house located in the middle of the hotel garden or the SCHWARZWALD PANORAMA, also focus on the trending topic of individuality and independence. Stephan Bode, Managing Director of the SCHWARZWALD PANORAMA confirms the high number of reservations of the self-sufficient accommodation units next to the main hotel and adds: “The demand for our flats was extremely high this year. We notice that guests, of course, still like to take advantage of the hotel's offers and want to be pampered in the wellness area or in the restaurant.”

Sustainability also scores in the luxury segment

The fact that ‘pampering’ and individuality go hand in hand is also evident in the luxury segment. Offers such as the LENI MOUNTAIN Chalet in Sölden, which includes its own natural swimming pond, sauna area and concierge service, or the villas of the Keemala on Phuket with their own pool were very well booked in 2021 – for as long as travel restrictions allowed. Tamm Gan from the sustainable luxury resort Gili Lankansfushi in the Maldives says: "In view of the ongoing pandemic, we have noticed that the demand for holiday destinations with open spaces has increased significantly. We have also seen that more and more families are booking together with us - travelling together but wanting to stay separately. However, there are also individual travellers who want to escape the stress of their everyday lives who have increasingly returned to enjoy what we have to offer.”

“We were able to score points this year, especially with the resort's generous space, plenty of privacy and our 'Mindful Luxury' concept. For our conscious interaction with nature and individual offers, we have received a lot of encouragement and were able to record an excellent booking situation, especially in summer,” explains to Denis Martin, General Manager of the 5* star Maslina Resort on the Croatian island of Hvar.

Trust and authenticity convince in all areas

The transparency of services, the appreciation of nature and a social togetherness are appreciated by guests of all sustainable accommodations. Kristin Okelmann from the eco-hotel Okelmann's is also of this opinion and summarises the development as follows: “More and more guests who are very interested in sustainability and have a corresponding lifestyle are coming to stay with us. In 2022, a sound hygiene and safety concept, a responsible approach to the pandemic, sustainability and individuality will continue to count. Nature, tranquillity and short travel distances have played a large role this year and will continue to do so next year.”

Eco Park Hotel Azalea - Italy

In the middle of the small Italian town of Cavalese in Trentino, surrounded by a lush garden, you will find the Eco Park Hotel Azalea. It has been a project close to the heart of the Delmattio family for three generations. The story of the Azalea begins back in the 1940s, when the great aunts Gisella and Fortunata, together with Bruno, the father of the current owner, converted the farm from their grandparents into the small Azalea guesthouse. Bruno was only 15 at the time, but he had a vision for the hotel: "A place where no alarm clock rings in the morning" was his motto for the quiet oasis.

In 2007, Bruno was faced with a rather urgent decision: the structure of the hotel was very fragile and renovation was inevitable, so along with the renovation he decided now was the time to expand. The current owner Manuela Delmattio and her German husband Olaf, both architects, developed a design for an environmentally-friendly and sustainable renovation. The vision of the two architects was a house full of innovation for guests - but it fell apart. The hotel was on the verge of ruin.

Manuela gave up her career as an architect and in 2008, under her leadership and that of her father, the construction work for an ecological hotel was able to begin. Only four years later, in 2012, Bruno passed away and Manuela decided to run the hotel alone with her employees in a consistently sustainable way and to remain true to her visions. For Manuela, the family tradition and her father's teachings were and remain a source of inspiration.

Tongsai Bay - Thailand

The story of the origins of Tongsai Bay begins in 1983, and sounds a bit like something out of a fairy tale. Khun Akorn Hoontrakul discovered the bay from the sea and fell in love with it. Within a few days, the then owner of the Imperial Hotel Group bought the land. He had a dream to build a resort with minimal impact on the natural environment.

For three months he slept on the beach to ensure that the cottages were positioned correctly, that no trees were cut down, no animals were harmed and that there was as little interference with nature as possible.

After falling ill in 1993, Akorn sold the Imperial Hotel Group, but kept Tongsai Bay to spend the rest of his life there with his beloved wife Chompunute.

In 2000, Akorn passed away and the management of Tongsai Bay passed into the hands of his son Thanakorn and daughter-in-law Saisiri. Both share Akorn's passion for conservation and Thai hospitality. Under their watchful eyes, Tongsai Bay continued to grow and develop its own Green Projects.

In addition to ecological sustainability, the family focuses on social commitment and supports animal shelters, schools, temple projects and "Sisters of Samui", a project that feeds more than 1,000 homeless individuals every day.

Okelmann’s – Germany

Sisters Kristin and Maren are already the fifth generation to run Okelmann's. The hotel in the municipality of Warpe in Lower Saxony has been in the family for over 130 years, and the building itself has been there since 1879. Since the 19th century, the family has had a farm and still has forestry operations to this day.

"My sister and I had been interested in organic food, natural cosmetics and alternative healing methods since our teenage years," Kristin describes her passion for the topic of sustainability.

A project close to the sisters' hearts: the opening of the hotel's own café. There, grandma Martha's traditional recipes are brought back to life. The love of home is also palpable in the restaurant. Here, the season dictates what finds it’s way on to the plate and all dishes are prepared with love and regional ingredients.

A special feature of Okelmann's? In addition to 16 rooms, the spacious premises also offer room for a wide variety of events: whether it's a wedding, birthday or family celebration, with a view of the garden and surrounding fields, Okelmann's is a wonderful place to celebrate. This makes the celebrations not only sustainable, but also carefree, because Kristin is an event planner and takes care of everything herself on site.

One family, two sisters, the best Okelmann's team

For the last 130 years, the Okelmann family has been running a small hotel in a building dating back to 1879 in the community of Warpe in Lower Saxony. Today, Okelmann's is known far beyond the borders of the small town. Travelers appreciate the warm, down-to-earth hospitality, the regional ties, and the family atmosphere. It is run by the 5th generation of sisters, Kristin and Maren. Both bring a wealth of experience with them which they gained in their stations in a variety of other hotels and can now be adapted and implement in their parents' business. It's all about visions, creativity, and enjoyment.

The smell of freshly brewed coffee, candlelight, and coziness. Add to that Maren's home-baked cakes and good conversations - that's all it takes for a little happiness."


We talked to Kirsten Okelmann about what drives her.

Was the sustainable focus always there or did you work with your sister to develop it - and why?

We have had a farm since the 19th century, and we still do some forestry today. So there has always been a strong connection to nature.

My sister and I had an intrinsic interest in organic food, natural cosmetics, and alternative healing methods since our teenage years.

When we opened our hotel and café in 2012, we already very much incorporated our love for fair products and a sustainable lifestyle.

From the beginning, the focus was on beneficial products such as Grander Water, the use of natural materials, sustainable construction, and organic products (such as organic and fair-trade coffee).

What about the broader topic of sustainability is particularly important to you?

It doesn't always have to be organic – and especially does not need to come from the other side of the world. We keep ourselves informed about new products from the region and get to know our suppliers and their organic methods personally.

It's amazing what variety of amazing products you sometimes have right on your doorstep.

In addition, one should always question the consequences of one's own actions and purchasing decisions - we think this also applies to the decision to go on holiday.

Nobody leads a perfect climate-neutral and 100% sustainable life, but there are so many possibilities along the way.

We are very happy to see that this topic is coming more and more into focus and is encouraging people to behave differently or act more consciously.

In 2019, the SCHWARZWALD PANORAMA started to create high beds, from which the hotel's kitchen makes extensive use. In total there are 4 raised beds, distributed on the panoramic terraces, filled with organic humus/compost, with organic plants or seeds in organic and Demeter quality. All herbs are used fresh for the kitchen and bar. This year for the first time radishes, peas, peppers, tomatoes, cucumbers, eggplants, zucchini, pumpkin, melons, kohlrabi, pepperoni, salads, and spring onions could be picked.

The Biohotel Sturm also relies entirely on organic in its 3-hectare snack garden, which supplies the kitchen with organic products. The herb and snack garden is also an inspiration for guests to imitate in small quantities and invites them to pick and taste for themselves. It was created by passionate herb and landscape gardeners with a natural bathing pond and log cabin sauna.

The Okelmann's in Warpe also relies on regional products in organic quality. All herbs and spices come from their own garden and the food is purchased seasonally and regionally from local producers, who the host family knows personally.

The Creativhotel Luise offers courses to bring people closer to the trees and their meaning. Shinrin-Yoku means immersion in the forest or also new-German Waldbaden. The name and origin come from Japan. As early as 1982, the Ministry of Forestry encouraged people to immerse themselves in the atmosphere of the forest in their free time in order to reduce stress and live healthier. Many studies have proven that a stay in the greenery counteracts depression and burn-out and even lowers blood pressure and pulse rate. But what distinguishes immersing in the forest from a walk in the woods? It is the slowness and therefore also more attentiveness. The point is not to walk particularly much or for a long time or to have been to many places. Today we would like to present some examples of Green Pearls® Hotels and their projects.

SCHWARZWALD PANORMA: SchwaPa BIO Kids

"The obligation to support or establish regional projects." In 2018 Stephan Bode, owner of the Hotel SCHWARZWALD PANORAMA signed the WIN Charter of the German state of Baden-Württemberg. After a long period of development work, the SchwaPa BIO Kids project launched in May 2019 with 15 school children.

The aim was to teach primary school children in the third and fourth grades about food, how it is processed and environmental protection measures that can be put in place. A total of five events were held on the topics of harvesting, animal husbandry, food production and processing, cooking, service, nutrition, etiquette, sustainability, recycling, biodiversity and climate protection. The pupils were not completely unprepared, as the school already offered a nutritional “Driver’s License”. Stephanie Schießl was responsible for overseeing the entire project and is also the CSR representative of the SCHWARZWALD-PANORAMA. She was where everything comes together. Principal Patricia Fischer from the Falkensteinschule was in charge of the project and Martina Shakya from Heilbronn University was also involved as head of the Sustainable Tourism Development Department. The patron was District Administrator Helmut Riegger.

At the end of the project, it was planned that the children would invite their parents and all those responsible to coffee and homemade cake at the table they had set themselves. The Heilbronn University of Applied Sciences also presented the participants with a certificate after a small test.

For Stephan Bode, the goal was to give the children an opportunity to put into practice what they had learned and to commit themselves to sustainable development in the future.

Unfortunately, the project was discontinued after five sessions due to the Corona restrictions. However, the feedback from parents and responsible persons involved was overwhelmingly positive.

Farmhouse Smiling Gecko: Refill Not Landfill

The Farmhouse Smiling Gecko is part of the worldwide project "Refill the World". Refill Not Landfill was founded in 2016 by Christian de Boer (Jaya House Hotels) and Dean McLachlan (JustRide Motorbike Adventures) and is a global campaign to reduce the amount of disposable plastic drinking bottles and other disposable plastic waste.

Refill Not Landfill aims to reduce plastic bottles and promotes the use of reusable drinking bottles. In doing so, millions of disposable plastic water bottles can be replaced and free water refill stations can be offered at participating companies and partners around the world.

The Farmhouse Smiling Gecko uses the refillable bottles on their tours and sells them in the small hotel shop. Refillable glass bottles are used in the guest rooms.

Keemala - Hotel Project Food Waste

The Keemala has managed, with great dedication, to create a 100% circular path for their food at the hotel. The organic garden covers almost 50% of the demand for ingredients. Different kinds of mushrooms, salads, morning glory, lemongrass, ginger, galangal, chili, basil, aloe vera and much more grows there. This significantly reduces the CO2 footprint both in the production and delivery of food and the farm-to-table concept means that guests always have the freshest possible ingredients. Some time ago, the garden was expanded to include more local green plants known for their immune-boosting properties, such as Malindjo leaves and green Chireta. The Keeemala works together with "Scholars of Sustenance" in Phuket and distributes unused food from the restaurant to disadvantaged communities and orphanages throughout Phuket. This helps to reduce food waste while also helping families and children in need. Compost not only helps enrich the soil and increase crop yields but also significantly reduces greenhouse gas emissions. Food waste from Keemala's kitchen is composted daily in a simple process.

Gili Lankanfushi and marine life 

The Eco-Luxury Resort is committed to minimizing its ecological footprint by implementing sustainable initiatives such as reducing energy and water consumption and effective waste management. Gili Lankanfushi works closely with EarthCheck, the world's leading scientific benchmarking, certification and advisory group for sustainable travel and tourism, and received Silver certification in 2017.

Marine Biology and Nature Conservation

Two dedicated marine biologists work at the resort and support the ambitious Coral Line project. The aim is to protect and replenish the island's house reef, preserve biodiversity and to alleviate periods of coral bleaching. The project started in 2014 and today the nursery has 160 coral ropes. Each of these ropes consists of 50 small coral pieces attached to a five-meter long rope which suspended from a frame five meters below the surface of the ocean. The growth of each coral fragment is closely monitored over a period of three years before it is carefully transplanted to the house reef. All data on coral growth is recorded in a master database and published online at lines.lankanfushi.com. Gili Lankanfushi's coral nursery is very successful and the Gili Veshi team works closely with marine biologists in the Maldives to advise and help replenish the coral nurseries of other islands after coral bleaching occurs.

Seaweeds are considered the lungs of the ocean and are a vital part of the local ecosystem. They provide habitat for fish, crustaceans and young sea cucumbers, which serve as food for the local turtle population, while also helping reduce CO2 levels. Gili Lankanfushi is committed to protecting and replenishing the island's seagrass beds and regularly monitors the regrowth of seagrass in the area surrounding the resort.

Inkaterra: Andean Bear Rescue Center

The only bear species native to South America is the Andean bear (Tremarctos ornatus). It lives in an area that stretches from Venezuela to Bolivia in the western Andean region which includes coastal deserts, foothill forests, cloud forests, evergreen forests, plains and highlands. It is listed on the IUCN Red List as an endangered species, which classifies it as threatened with extinction due to poaching and habitat loss.

In 2001, the Andean Bear Conservation Centre was established at the Hotel Inkaterra Machu Picchu Pueblo. Its mission is to study the rare bears that have been captured illegally with the aim of gaining a better understanding of their behavior in the cloud forest.

Currently, four bears are living in the sanctuary managed by the NGO Inkaterra Asociación (one female bear has even been successfully released back into the wild). The sanctuary includes an enclosure with trees, ramps and a freshwater pool, as well as a 2980m² area where two bears - a male and a female - have been released for reproduction and reintroduction into the wild. Skin and other medical checks are constantly conducted in coordination with the National Services for Nature Reserves (SERNANP).

Inkaterra Asociación, in cooperation with the Wildlife Conservation Society (WCS) and SERNANP, contributed to the publication of the National Andean Bear Conservation Strategy in Machu Picchu, a model for other wildlife management programs.

Kasbah du Toubkal and social committment 

In line with its commitment to local communities, the hotel charges a 5% fee in favor of the local village association "Association des Bassins d'Imlil" and "Education For All" www.educationforallmorocco.org. The Association des Bassins d'Imlil supports the needs of all of the surrounding valleys and provides the ambulance for the locals and guests. Other community projects that have been initiated include a waste collection system and provisions to the village of Hammam. Education For All helps to provide a college education for girls from the rural High Atlas.

Berghotel Rehlegg: Black Alpine Pig

Hannes and Franz Lichtmannegger from the Berghotel Rehlegg have initiated a very special project. Together with regional farmers, they breed the Black Alpine Pig, a species threatened with extinction. For the first time in more than 100 years, it is once again being bred in Bavaria.

The climate-positive certified restaurant obtains 90 percent of all food from the region. Their meat and fish come exclusively from organic, small-scale farming, which initially posed a problem when looking for meat from pig farming that focuses on animal welfare. The pink “fattening pigs” are not hardy enough to be kept on pastures all year round, among other things due to the fact that they have hardly any skin pigmentation and do not tolerate much sun. The solution is the hardy and outdoor-ready Black Alpine Pig, which had been extinct in Bavaria for over 100 years. He applied to the Italian protection organization "Pro Patronomio Montano", which is committed to the preservation of genetic diversity in the Alps, for some of the few surviving animals and, after extensive testing, he was able to produce six piglets. In cooperation with the partner farmers, Franz Kuchlbauer from Ramsau (district of Berchtesgadener Land) and Sebastian Kettenberger from Tittmoning (district of Traunstein) the breeding of the Black Alpine Pigs was resumed.

Currently, there are forty black Alpine pigs roaming the grounds of two partner farmers of the Berghotel Rehlegg.

Okelmann’s

The Hotel Okelmann's in Warpe in Lower Saxony makes monthly donations to organizations that are committed to the preservation and protection of nature (NaBu, Plant for the Planet).

HUBERTUS unplugged

At the HUBERTUS unplugged, almost everything is running normally again. Though, of course, masks are worn and shaking hands is avoided. The breakfast buffet is available once again, but only with the use of biodegradable disposable gloves. Some guests found the fact that saunas had been temporarily closed a positive, as it meant their holiday to-do list became one activity shorter. However, now nothing stands in the way of a sauna stay! The areas are completely disinfected twice per day which helps to ensure guests are relaxed yet safe, and cannot spend too much of their day in the sauna.

Holidaymakers wanting to socialize and get to know each other has posed a challenge for the hotel team. But managing director Marc Traubel is sure: "We will find a solution for this!”

Hofgut Hafnerleiten

Hofgut Hafnerleiten has moved many of its activities outside. The aperitif takes place in the inner courtyard and dinner is delivered directly to your room. Breakfast is also brought to the guests by individual arrangement. For the team, these changes have been going better than expected. Their guests even expressed the desire to also be able to book these new options after the Corona crisis.

Enthusiastic travelers:

"Due to the Corona circumstance, the service was particularly creative."

"We stayed at the Hofgut during the first week of the Corona reopening and at first, we were missing the evening "family dinner" (especially the company of the other guests). But to be able to pick up our starter and dessert at the aperitif, and then to hear a knock at the door half an hour later and have the main course hand-delivered: a holiday at its best".

Okelmann’s

In the Green Pearls® hotel, Okelmann's many things are also going better than expected. The guests are grateful for the opportunity to be able to spend some time away from their daily life at all. The large grounds and the limited rooms of the hotel make it possible to keep your distance. The staff provides their excellent service while wearing masks, but the guests themselves do not have to wear a mask at the table. The team always ensures the rooms are well-ventilated and the many terraces invite guests to enjoy the outdoors during good weather.

The individually arranged breakfast has been especially well-received by their guests. Meals are served in the café or in the rooms, and guests are enjoying the rich selection according to their wishes.

SCHWARZWALD PANORAMA

Especially the breakfast buffet in the SCHWARZWALD PANORAMA is praised by the guests in the current situation. The hotel team serves the food and there is still a rich selection. With preserving jars a creative approach to the situation was found.

The guests are also enthusiastic about the always friendly staff, who have kept their good mood.

Corona also showed regular guests:

"We were always very satisfied. We will certainly be happy to come back again".

Bio Familienhotel Gut Nisdorf

The new regulations mean that procedures have changed somewhat at the Bio Familienhotel Gut Nisdorf. However, the families that visit are still very happy about the time off from everyday life. The large property makes it easier for everyone to keep their distance, and movement around the hotel is based on a “one-way street” system so that guests will not have the chance to run into one another. Instead of the usual buffet, food can be served in the rooms or outside. Although this eliminates some enjoyable conversations in the dining area, they can just as easily be held in the fresh air.

And this is what one guest had to say:

"I felt that the protective measures gave me a special crown to wear as a guest! It even felt a little bit more personal, since now, for example, you are served at the bar while the Head Chef prepares a freshly fried egg for you breakfast basket which is then handed over the bar to you to enjoy wherever you like. It is quite a nice experience."

Holidays without restrictions 

On holiday, you just want to relax and have a good time. Nutrition plays an essential role in your overall happiness and wellbeing, and you are dependent on what is locally available. Many hotel kitchens combine traditional dishes with vegan or vegetarian alternatives. The variety ranges from the breakfast buffet to the menu selection in the evening. Vegan vs. Vegetarian

The difference between vegan and vegetarian can be clarified quickly: People who choose a vegan diet completely avoid animal products. With this form of nutrition, no animal products such as milk products, eggs or honey are eaten. Many vegans go beyond their meals and also avoid animal products in other areas of life, for example, their clothing and accessories.

With a vegetarian diet, meat and fish are given up and predominantly plant-based products are consumed, though the actual diet varies from person to person. The motivation for both ways of life is often animal welfare. However, an environmentally conscious and sustainable approach to food is also an important aspect.

The hotel deliberately focuses on a predominantly vegan and vegetarian menu. Reducing meat consumption for environmental reasons is the top priority – whether it's vegan Nutella in the morning, the vegan cake for an afternoon snack, or a vegetarian dinner. The chef of the Eco Park Hotel Azalea, Paola, is inspired by the spring in Val di Fiemme with its flowering meadows. When she feels the need for regeneration, she collects wild herbs and makes soup. The recipe for the soup "witch in the kitchen" is quick and easy to copy.

Gili Lankanfushi, Maldives

A resort with an extensive range of vegan and vegetarian options. Whether breakfast, lunch or dinner, the dishes focus on plant-based ingredients. Fruit and vegetables are home-grown and the head chef offers cooking events right in the garden. Vegan scallops are prepared here according to this recipe.

Hotel Milano Scala, Italy

In the hotel's restaurant, regional products are used to create traditional Italian dishes and there is always vegan and vegetarian options available. The hotel's own organic garden on the sixth floor offers seasonal vegetables, fruit and herbs – without the need for transportation and delivery emissions.

Fruits are available directly from the hotel's own garden and all the other ingredients are sourced from the surrounding region. Vegan and vegetarian dishes are offered, and personal wishes can be catered for if required.

The hotel has its own organic farm where many foods for daily use are grown. The "Earth to Table" event is a very special experience and allows guests to participate in the harvest themselves using traditional tools and oxen. Afterwards, the harvested products are prepared by the chefs. The menu consists mainly of plant-based dishes.

Paradiso Pure Living, Italy

The hotel restaurant has a purely vegetarian menu and also offers many vegan dishes. Regional and organic products are transformed into high-quality meals and the holistic concept of the hotel incorporates vegetarian food as a sensory experience.

Keemala, Thailand

In the gardens surrounding the resort, almost all the necessary food is grown. Herbs, fruit and vegetables are used almost exclusively from their own cultivation. In addition, they grow their own mushrooms and some plants are grown by hydroponics, i.e. without soil using only with nutrient-rich water. Those who have not yet satisfied their hunger during a walk through the fruit garden can enjoy many vegan and vegetarian dishes in the restaurant.

The Tongsai Bay, Thailand

Vegan and vegetarian options are available in the hotel's various restaurants and bars. Whether it's a snack, lunch or an extensive dinner, vegan and vegetarian guests are welcome at The Tongsai Bay. The eco-resort on Koh Samui has its own garden, where, among other things, jackfruit is grown. The Jackfruit is used here among meals for the Jackfruit Burger.

Therefore we have a request for you: Keep dreaming about your holiday and plan it for the time after the Corona crisis. It really helps the hotels and tour operators if you don't cancel your booking completely but rather postpone it to a later date. Some hotels have introduced special policies especially for this situation in these difficult times, especially since nobody can say for sure when the situation will begin to ease. With your rebooking, you are supporting livelihoods and above all, you are supporting the people who are already feeling the challenging impacts of this crisis. These tips are already circulating in the media in a similar tenor for musicians and artists: If you can afford it, support them by simply letting the tickets for the events expire or buy their books and CDs for enjoyment at home to help make sure that their very survival is not threatened.
